Description

This refreshing and creamy cucumber shrimp salad is the perfect dish for a light lunch or dinner. With tender shrimp, crisp cucumbers, and a tangy dressing, it’s a delightful blend of flavors and textures.


Ingredients

  • 1 lb shrimp, cooked and peeled
  • 2 cucumbers, sliced (about 2 cups)
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp dill, chopped
  • Salt and pepper to taste

Instructions

  • Prepare the Dressing: In a large bowl, combine the Greek yogurt, mayonnaise, lemon juice, and Dijon mustard. Stir until smooth.
  • Combine Ingredients: Add the cooked shrimp, sliced cucumbers, and red onion to the bowl. Gently mix to coat all ingredients with the dressing.
  • Season and Toss: Sprinkle the chopped dill over the salad and season with salt and pepper to taste. Toss the salad lightly to evenly distribute the dill and seasoning.
  • Chill: Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
