- 1 pint cherry tomatoes

- Fresh parsley for garnish
Instructions
- Make the hummus: In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth and creamy.
- Roast the tomatoes: Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil and spread them evenly on a baking sheet. Roast for 15-20 minutes until the tomatoes are golden brown and blistered.
- Assemble the dish: Spoon the hummus into a serving bowl and top with the roasted cherry tomatoes.
- Garnish and serve: Garnish with fresh parsley and serve with pita bread, vegetable sticks, or crackers.
