This creamy homemade hummus, paired with sweet roasted cherry tomatoes, offers a delicious balance of flavors. The rich tahini and garlicky hummus are complemented by the caramelized tomatoes, making this dish a perfect dip for pita bread or vegetables.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • ¼ cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • ¼ cup olive oil
  • Salt to taste
  • 1 pint cherry tomatoes
  • Olive oil for roasting
  • Fresh parsley for garnish

Instructions

  • Make the hummus: In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth and creamy.
  • Roast the tomatoes: Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil and spread them evenly on a baking sheet. Roast for 15-20 minutes until the tomatoes are golden brown and blistered.
  • Assemble the dish: Spoon the hummus into a serving bowl and top with the roasted cherry tomatoes.
  • Garnish and serve: Garnish with fresh parsley and serve with pita bread, vegetable sticks, or crackers.

Notes

  • For an extra kick, add a pinch of cayenne pepper to the hummus mixture.
