Description

This creamy, comforting rice pudding is a timeless dessert with a touch of vanilla and cinnamon, creating a perfect balance of sweetness and spice. Whether enjoyed warm or chilled, it’s a nostalgic treat that brings warmth and comfort to any occasion. The optional raisins add a burst of sweetness, but the pudding is delicious on its own as well.


Ingredients

  • 1 cup white rice
  • 2 cups water
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raisins (optional)

Instructions

  • In a medium saucepan, combine the rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the water is absorbed.
  • Stir in the milk, sugar, salt, vanilla extract, and ground cinnamon. Continue to cook over medium heat, uncovered, stirring occasionally, until the mixture thickens to a creamy consistency. This will take about 20-25 minutes.
  • Once the pudding has thickened, remove it from the heat and stir in the raisins, if using.
  • Serve the rice pudding warm or let it cool and refrigerate for a chilled treat. Sprinkle with extra cinnamon before serving, if desired.

Notes

  • For extra creaminess, use whole milk or add a splash of heavy cream toward the end of cooking.
  • If you prefer a smoother texture, you can mash the rice slightly as it cooks or blend a portion of it before adding the raisins.
  • Leftovers can be stored in the refrigerator for up to 3 days. Simply reheat with a little extra milk to restore the creamy consistency.
