- 2 cups water
- 2 cups milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup raisins (optional)
Instructions
- In a medium saucepan, combine the rice and water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the water is absorbed.
- Stir in the milk, sugar, salt, vanilla extract, and ground cinnamon. Continue to cook over medium heat, uncovered, stirring occasionally, until the mixture thickens to a creamy consistency. This will take about 20-25 minutes.
- Once the pudding has thickened, remove it from the heat and stir in the raisins, if using.
- Serve the rice pudding warm or let it cool and refrigerate for a chilled treat. Sprinkle with extra cinnamon before serving, if desired.
Notes
- For extra creaminess, use whole milk or add a splash of heavy cream toward the end of cooking.
- If you prefer a smoother texture, you can mash the rice slightly as it cooks or blend a portion of it before adding the raisins.
- Leftovers can be stored in the refrigerator for up to 3 days. Simply reheat with a little extra milk to restore the creamy consistency.
