Description

Creamy Pumpkin Gnocchi is the perfect autumn comfort dish combining soft, pillowy gnocchi with a rich and velvety pumpkin cream sauce. This elegant yet simple recipe blends seasonal pumpkin puree, aromatic garlic and shallots, fragrant sage, and nutty parmesan cheese to create a warming, flavorful meal ideal for cozy fall evenings or entertaining.

Ingredients

Scale

Gnocchi

  • Store-bought or homemade potato gnocchi (around 1 lb / 450 g)

Sauce

  • 1 cup pumpkin puree (fresh or canned)
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 68 fresh sage leaves
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the aromatics: Finely chop shallots and garlic. In a large skillet, melt butter over medium heat and sauté shallots and garlic until translucent and fragrant, about 3 to 4 minutes.
  2. Cook the gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, approximately 2 to 3 minutes. Use a slotted spoon to transfer the gnocchi directly into the skillet with the aromatics.
  3. Add pumpkin and cream: Stir in the pumpkin puree, heavy cream, and sage leaves. Reduce heat to low and gently simmer the sauce, allowing it to thicken slightly, about 5 minutes. Stir occasionally to prevent sticking.
  4. Incorporate cheese and seasoning: Sprinkle in the grated Parmesan cheese and season with salt and freshly ground black pepper. Stir well until the cheese melts and the sauce becomes creamy and smooth.
  5. Serve warm: Remove sage leaves if preferred, then plate the gnocchi immediately. Garnish with additional Parmesan cheese or fresh herbs for an inviting presentation.

Notes

  • Choose the right gnocchi: Fresh gnocchi provides the best tender texture, but good quality frozen or store-bought works well.
  • Always salt the water for cooking gnocchi to season from within.
  • Use pure pumpkin puree, not pumpkin pie filling, to avoid overly sweet or spiced flavors.
  • Keep sauce consistency silky by stirring regularly and adjusting cream as needed.
  • Fresh herbs added at the end brighten and complement the creamy richness perfectly.
