  • 1 lb smoked sausage, sliced
  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the penne pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the smoked sausage slices and cook for 5-7 minutes, until browned and cooked through. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
  • Add the chicken broth and bring to a simmer. Let it cook for about 2-3 minutes, scraping the bottom of the skillet to deglaze any browned bits.
  • Stir in the heavy cream, mozzarella cheese, Italian seasoning, paprika, salt, and pepper. Stir constantly until the sauce is smooth and the cheese is melted.
  • Return the cooked sausage and pasta to the skillet, tossing to coat everything in the creamy sauce.
  • Let the pasta simmer for another 2-3 minutes until everything is heated through.
  • Garnish with freshly chopped parsley and serve immediately.

Notes

  • You can substitute the smoked sausage with other types of sausage, such as kielbasa or Italian sausage, depending on your preference.
  • For a spicier version, you can add a pinch of red pepper flakes to the sauce.
  • If you prefer a thicker sauce, you can reduce the amount of chicken broth and let the sauce simmer longer to thicken.
