- 1/2 teaspoon paprika

Instructions
- Cook the penne pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the smoked sausage slices and cook for 5-7 minutes, until browned and cooked through. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
- Add the chicken broth and bring to a simmer. Let it cook for about 2-3 minutes, scraping the bottom of the skillet to deglaze any browned bits.
- Stir in the heavy cream, mozzarella cheese, Italian seasoning, paprika, salt, and pepper. Stir constantly until the sauce is smooth and the cheese is melted.
- Return the cooked sausage and pasta to the skillet, tossing to coat everything in the creamy sauce.
- Let the pasta simmer for another 2-3 minutes until everything is heated through.
- Garnish with freshly chopped parsley and serve immediately.
