Description

This indulgent French toast is stuffed with a creamy, sweetened cheesecake filling and fresh strawberries. Topped with whipped cream and syrup, it’s a delightful breakfast or brunch treat!

Ingredients

Scale
  • 8 slices of thick bread (such as brioche or Texas toast)
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 2 tbsp butter, for cooking
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh strawberries, chopped
  • 1/2 cup fresh strawberries, sliced
  • Whipped cream
  • Maple syrup or powdered sugar for serving

Instructions

  • Make the cheesecake filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the chopped strawberries. Set aside.
  • Prepare the French toast: In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon.
  • Assemble the stuffed French toast: Spread the cheesecake filling evenly onto 4 slices of bread. Top with the remaining slices of bread to create a sandwich.
  • Cook the French toast: Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter. Dip each sandwich into the egg mixture, making sure to coat both sides evenly. Place the sandwiches on the hot skillet and cook for 2-3 minutes per side, or until golden brown. Repeat with the remaining sandwiches, adding more butter as needed.
  • Serve: Top the French toast with fresh strawberry slices, whipped cream, and a drizzle of maple syrup or dusting of powdered sugar.

Notes

  • You can use other fruits, such as blueberries or raspberries, if you prefer.
  • For extra richness, you can use mascarpone cheese in place of cream cheese for the filling.
  • If you don’t have thick bread, you can use regular sandwich bread, though thicker bread works better for stuffing.
