This Creamy Tuscan Chicken Pasta features tender chicken breasts in a rich, creamy sauce made with garlic, tomatoes, spinach, and Parmesan cheese. Served over fettuccine and garnished with fresh basil, it’s an indulgent and flavorful meal perfect for any occasion.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine pasta
  • Fresh basil, for garnish

Instructions

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the chicken breasts to the skillet and cook until browned on both sides and no longer pink inside. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and halved cherry tomatoes. Cook for about 2-3 minutes, until the tomatoes start to soften.
  • Add the spinach to the skillet and cook for another 2-3 minutes, until the spinach wilts.
  • Stir in the heavy cream and Parmesan cheese. Bring the mixture to a simmer and cook for 2-3 minutes, until the sauce thickens slightly.
  • Cook the fettuccine pasta according to package instructions, then drain.
  • Slice the cooked chicken breasts and add them back to the skillet with the creamy sauce.
  • Serve the creamy Tuscan chicken sauce over the cooked pasta.
  • Garnish with fresh basil before serving.

Notes

  • For extra richness, you can add a little more Parmesan cheese to the sauce.
  • You can substitute the fettuccine with another pasta of your choice, such as penne or spaghetti.
