Description

This creamy vinaigrette is a deliciously smooth dressing that blends the tanginess of vinegar with the richness of mayonnaise or Greek yogurt. Perfect for drizzling over salads, roasted vegetables, or even as a dipping sauce.


Ingredients

  • 2 tablespoons white wine vinegar (or apple cider vinegar)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey (optional for sweetness)
  • 1/4 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 small garlic clove, minced (optional)
  • 1 teaspoon dried oregano (optional)

Instructions

  • In a small bowl, whisk together the vinegar, Dijon mustard, and honey (if using).
  • Add the mayonnaise (or Greek yogurt) and whisk until smooth.
  • Slowly drizzle in the olive oil while continuing to whisk to emulsify the dressing.
  • Stir in the minced garlic and dried oregano, if using, and season with salt and pepper to taste.
  • Serve immediately or store in an airtight container in the fridge for up to 1 week.

Notes

  • Adjust the sweetness to your liking by increasing or decreasing the amount of honey.
  • For a creamier dressing, use full-fat mayonnaise or Greek yogurt. For a lighter version, opt for low-fat or fat-free versions.
