Creme Brulee Cheesecake combines the rich, creamy texture of cheesecake with the elegant flavor of creme brulee. A buttery graham cracker crust holds a smooth, velvety filling, topped with a rich, caramelized sugar crust, offering the perfect balance of sweetness and indulgence.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 325°F (165°C).
  • In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter.
  • Press mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, mix cream cheese, 1 cup sugar, and 1 tsp vanilla extract until smooth.
  • Beat in eggs one at a time.
  • Pour the cream cheese mixture over the crust in the springform pan.
  • Bake in preheated oven for 60 minutes.
  • Turn the oven off, and let cheesecake cool in the oven with the door closed for 5 to 6 hours.
  • Chill in the refrigerator before serving.

Notes

  • Make sure to allow the cheesecake to cool gradually in the oven, as this helps prevent cracks in the surface.
  • For the signature creme brulee top, you can sprinkle sugar on the cheesecake after it has chilled, and use a kitchen torch to caramelize it.
  • This cheesecake can be made ahead of time and refrigerated overnight for best results.
