- 4 eggs

- 1/4 cup sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F (165°C).
- In a medium bowl, mix together graham cracker crumbs, 1/4 cup sugar, and melted butter.
- Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, mix cream cheese, 1 cup sugar, and 1 tsp vanilla extract until smooth.
- Beat in eggs one at a time.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake in preheated oven for 60 minutes.
- Turn the oven off, and let cheesecake cool in the oven with the door closed for 5 to 6 hours.
- Chill in the refrigerator before serving.
Notes
- Make sure to allow the cheesecake to cool gradually in the oven, as this helps prevent cracks in the surface.
- For the signature creme brulee top, you can sprinkle sugar on the cheesecake after it has chilled, and use a kitchen torch to caramelize it.
