Description

Soft, chewy, and sweet, these Strawberry Sugar Crinkle Cookies are the perfect treat for any occasion. With a burst of strawberry flavor and a hint of vanilla, these cookies are a delightful twist on the classic sugar cookie.   • 1 ½ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened (or plant-based butter for dairy-free version)
  • 1 cup granulated sugar, plus extra for rolling
  • 1 large egg
  • ½ tsp vanilla extract
  • ¼ tsp strawberry extract
  • Pink food coloring (optional)
  • Strawberry jam (for filling)

Instructions

  • Preheat oven and prep baking sheets:
    Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Prepare dry ingredients:
    In a small bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • Cream butter and sugar:
    In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. This should take about 2-3 minutes.
  • Add egg and extracts:
    Beat in the egg, vanilla extract, and strawberry extract until fully combined. If using food coloring, add a few drops of pink food coloring and mix until the dough is evenly colored.
  • Combine wet and dry ingredients:
    Gradually add the dry ingredients to the butter mixture, mixing until combined.
  • Shape and roll:
    Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in extra granulated sugar to coat evenly.
  • Bake:
    Place the cookie balls on the prepared baking sheets about 2 inches apart. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
  • Fill with jam:
    Add a small teaspoon of strawberry jam into each indentation.
  • Bake the cookies:
    Bake for 10-12 minutes, or until the edges are golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

  • For a dairy-free version, simply use plant-based butter instead of unsalted butter.
  • You can swap the strawberry jam for raspberry or apricot jam for a fun variation.
  • If the dough feels too sticky, chill it in the fridge for 30 minutes before rolling into balls.
