- 1 lb boneless, skinless chicken thighs
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp sake
- 1 tbsp mirin
- 1/2 cup potato starch
- Cooking spray
Instructions
- Cut the chicken thighs into bite-sized pieces and place in a bowl.
- Add the garlic, ginger, soy sauce, sake, and mirin to the bowl and mix well to coat the chicken.
- Cover the bowl and marinate the chicken in the fridge for at least 30 minutes.
- Preheat the air fryer to 400°F (200°C).
- Place the potato starch in a shallow dish.
- Dredge the marinated chicken pieces in the potato starch, shaking off any excess.
- Lightly coat the air fryer basket with cooking spray.
- Place the chicken in the basket in a single layer, making sure not to overcrowd.
- Air fry the chicken at 400°F (200°C) for 10-12 minutes, flipping halfway through, until golden and crispy.
- Serve hot and enjoy!

- You can substitute potato starch with cornstarch for a similar result.
- For a spicier version, add a pinch of chili flakes to the marinade.
