For the Battered Cod:

  • 4 cod fillets (about 6 oz each)
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon baking powder
  • 1 cup cold sparkling water
  • Vegetable oil for frying

For the Onion Rings:

  • 2 large onions, peeled and sliced into rings
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 cup breadcrumbs
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  • For the Cod: In a bowl, mix flour, cornmeal, paprika, garlic powder, and baking powder. Gradually whisk in the cold sparkling water until the batter is smooth.
  • Season the cod fillets with salt and black pepper. Dip each fillet into the batter, ensuring it’s fully coated.
  • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the battered cod fillets until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.
  • For the Onion Rings: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  • Dredge the onion rings in flour, then dip in buttermilk, and coat with breadcrumbs mixed with paprika, garlic powder, salt, and pepper.
  • Fry the onion rings in batches until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
  • Serve the crispy battered cod fillets and onion rings together with your favorite dipping sauces.
