Description

Savory muffins packed with the goodness of zucchini and potatoes, enhanced with crispy Parmesan. These delightful bites make for a perfect snack or side dish!


Ingredients

Scale
  • 1 medium zucchini, grated
  • 1 medium potato, grated
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • Cooking spray

Instructions

  • Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray.
  • In a large bowl, combine the grated zucchini, potato, Parmesan cheese, eggs, breadcrumbs, salt, and pepper. Mix well.
  • Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
  • Bake in the preheated oven for 25-30 minutes, or until the muffins are golden brown and crispy on the edges.
  • Allow the muffins to cool slightly before removing them from the tin. Serve warm.

Notes

  • You can add herbs like oregano or basil for extra flavor.
