- 1 medium potato, grated
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/4 cup breadcrumbs

Instructions
- Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray.
- In a large bowl, combine the grated zucchini, potato, Parmesan cheese, eggs, breadcrumbs, salt, and pepper. Mix well.
- Spoon the mixture into the prepared muffin tin, filling each cup almost to the top.
- Bake in the preheated oven for 25-30 minutes, or until the muffins are golden brown and crispy on the edges.
- Allow the muffins to cool slightly before removing them from the tin. Serve warm.
