Description

These crispy roasted chickpeas are a healthy, crunchy snack that’s easy to make and endlessly customizable. With just a few ingredients and your favorite spices, you can create a savory treat that’s perfect on its own or as a topping for salads, soups, or grain bowls.


Ingredients

  • 1 1/2 cups cooked chickpeas, drained and rinsed

  • Extra-virgin olive oil, for drizzling

  • Sea salt, to taste

  • Paprika, curry powder, or other spices (optional, to taste)


Instructions

  • Preheat oven to 400°F (200°C).

  • Pat the chickpeas very dry with a clean towel. Remove any loose skins for extra crispiness.

  • Spread chickpeas on a baking sheet in a single layer. Drizzle with olive oil and toss to coat.

  • Roast for 25–35 minutes, shaking the pan halfway through, until golden brown and crispy.

  • Remove from oven and immediately season with sea salt and your choice of spices.

  • Let cool before serving. Store in an airtight container at room temperature for up to 2 days.

Notes

  • For maximum crunch, make sure chickpeas are thoroughly dried before roasting.

  • Experiment with spice blends like cumin, garlic powder, chili powder, or za’atar.
