1 1/2 cups cooked chickpeas, drained and rinsed

Extra-virgin olive oil, for drizzling

Instructions

Preheat oven to 400°F (200°C).

Pat the chickpeas very dry with a clean towel. Remove any loose skins for extra crispiness.

Spread chickpeas on a baking sheet in a single layer. Drizzle with olive oil and toss to coat.

Roast for 25–35 minutes, shaking the pan halfway through, until golden brown and crispy.

Remove from oven and immediately season with sea salt and your choice of spices.
