This rich and creamy Crock Pot Crack Potato Soup is packed with the comforting flavors of crispy bacon, cheddar cheese, and sour cream, making it the ultimate cozy meal. With tender potatoes and a smooth texture, this soup is a crowd-pleaser that’s perfect for chilly days.


Ingredients

  • 6 slices bacon, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 lbs russet potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  • In a large skillet, cook bacon until crispy. Remove bacon and set aside.
  • Add onion and garlic to the skillet and cook until softened.
  • Transfer onion, garlic, and bacon to a crock pot. Add chicken broth and potatoes.
  • Cover and cook on low for 6-8 hours, or high for 3-4 hours, until potatoes are tender.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in heavy cream, cheddar cheese, and sour cream until cheese is melted.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions.

Notes

  • For extra texture, you can leave some of the potatoes unblended or mash them with a potato masher.
  • You can substitute the sour cream with Greek yogurt for a tangier flavor.
