These Crockpot Beef Tacos are an easy, flavorful meal made with tender, slow-cooked chuck roast seasoned with taco seasoning, chipotle, and lime. Perfect for taco night, the beef is served in warm tortillas with fresh toppings like shredded lettuce, tomatoes, avocado, and sour cream.

- 2 lbs. boneless chuck roast
- Salt and pepper to taste
- 1 cup beef broth
- 1 small onion, diced
- 3 garlic cloves, chopped
- 2 tablespoons taco seasoning
- 1 tablespoon coconut aminos (or substitute soy sauce)
- 1 teaspoon salt
- 1 tablespoon chipotle in adobo sauce
- Juice from 1 lime
For the tacos:
- Tortillas
- Shredded lettuce
- Tomatoes, diced
- Fresh cilantro
- Sour cream
- Avocado, sliced
Instructions
- Place the chuck roast in the Crockpot.
- Season with salt and pepper.
- Add the beef broth, diced onion, chopped garlic, taco seasoning, coconut aminos (or soy sauce), salt, chipotle in adobo sauce, and lime juice.
- Cover and cook on low for 6-8 hours, or until the meat is tender and can be shredded easily.
- Once cooked, shred the beef with two forks.
- Serve the beef in tortillas with your choice of toppings like shredded lettuce, diced tomatoes, cilantro, sour cream, and sliced avocado.
Notes
- For a milder taco filling, reduce the amount of chipotle in adobo sauce.
- You can also serve the beef with rice or on a salad if you prefer a low-carb version.
