- 2 lbs boneless, skinless chicken thighs
- 1/2 cup low sodium soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup bourbon
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/4 tsp red pepper flakes
- 2 tbsp cornstarch
- 2 tbsp water
- Green onions, chopped (for garnish)
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, mix soy sauce, brown sugar, ketchup, bourbon, garlic, ginger, and red pepper flakes. Pour over chicken.
- Cover and cook on low for 4-5 hours.
- Remove chicken from the crockpot and shred it.
- In a small bowl, mix cornstarch and water. Stir into the sauce in the crockpot.
- Return chicken to the crockpot and stir to coat in sauce. Cook for an additional 30 minutes.
- Serve over rice, garnished with chopped green onions.
Notes
- This dish can be served with steamed rice or vegetables.
- Adjust the level of red pepper flakes based on your spice preference.
- You can use chicken breasts instead of thighs, but thighs tend to be more tender when cooked in a slow cooker.
