A flavorful and easy-to-make Crockpot Bourbon Chicken that combines tender chicken thighs with a savory-sweet sauce made from bourbon, soy sauce, brown sugar, and a touch of spice. Perfect for a cozy dinner served over rice!


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup low sodium soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup bourbon
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/4 tsp red pepper flakes
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Green onions, chopped (for garnish)

Instructions

  • Place chicken thighs in the crockpot.
  • In a bowl, mix soy sauce, brown sugar, ketchup, bourbon, garlic, ginger, and red pepper flakes. Pour over chicken.
  • Cover and cook on low for 4-5 hours.
  • Remove chicken from the crockpot and shred it.
  • In a small bowl, mix cornstarch and water. Stir into the sauce in the crockpot.
  • Return chicken to the crockpot and stir to coat in sauce. Cook for an additional 30 minutes.
  • Serve over rice, garnished with chopped green onions.

Notes

  • This dish can be served with steamed rice or vegetables.
  • Adjust the level of red pepper flakes based on your spice preference.
  • You can use chicken breasts instead of thighs, but thighs tend to be more tender when cooked in a slow cooker.
