Description

 

This creamy, comforting chicken pasta is made easy in the crockpot. Tender, shredded chicken is cooked in a rich garlic Parmesan sauce, then combined with perfectly cooked pasta for a flavorful, all-in-one meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup diced onion
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 8 oz pasta (any variety)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Place the chicken breasts in the crockpot.
  • Add chicken broth, heavy cream, grated Parmesan cheese, diced onion, minced garlic, Italian seasoning, salt, and pepper. Stir to combine.
  • Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
  • Once the chicken is cooked, shred it using two forks and stir it back into the sauce.
  • While the chicken is cooking, cook the pasta according to the package instructions. Drain the pasta.
  • Add the cooked pasta to the crockpot and stir to combine, making sure the pasta is coated with the creamy sauce.
  • Serve the pasta hot, garnished with fresh chopped parsley.

Notes

  • For a richer flavor, you can add an extra 1/4 cup of Parmesan cheese just before serving.
  • You can use any pasta shape, but fettuccine, penne, or rotini work especially well.
  • If you want a thicker sauce, reduce the amount of chicken broth or cook the sauce uncovered for a little longer to let it reduce.
