- 6–8 medium red potatoes, quartered
- 1 packet (1 oz) ranch seasoning mix
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Add quartered potatoes on top of the chicken.
- In a separate bowl, mix together ranch seasoning mix, cream of chicken soup, and chicken broth.
- Pour the mixture over the chicken and potatoes in the crockpot.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until chicken is cooked through and potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped fresh parsley.
Notes
- You can substitute the ranch seasoning mix with homemade ranch seasoning if preferred.
- For a creamier texture, add an extra 1/2 cup of chicken broth or cream of chicken soup.
