Description

This easy and flavorful Crockpot Ranch Chicken and Potatoes recipe is a perfect weeknight dinner. Tender chicken breasts and hearty potatoes are cooked in a creamy, savory ranch sauce for a comforting, one-pot meal your family will love.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 68 medium red potatoes, quartered
  • 1 packet (1 oz) ranch seasoning mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Place chicken breasts in the bottom of the crockpot.
  • Add quartered potatoes on top of the chicken.
  • In a separate bowl, mix together ranch seasoning mix, cream of chicken soup, and chicken broth.
  • Pour the mixture over the chicken and potatoes in the crockpot.
  • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until chicken is cooked through and potatoes are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped fresh parsley.

Notes

  • You can substitute the ranch seasoning mix with homemade ranch seasoning if preferred.
  • For a creamier texture, add an extra 1/2 cup of chicken broth or cream of chicken soup.
  • If you prefer a crispy skin on the chicken, sear the chicken breasts in a hot skillet before adding them to the crockpot.
