Ingredients
Scale
- 1 whole chicken (4–5 lbs)
- 1 ½ teaspoons salt
- 1 teaspoon pepper
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 ½ teaspoon thyme
- ¼ teaspoon cayenne powder
- ½ tablespoon brown sugar
- 2 medium onions, quartered
- 3 stalks celery (with leafy stalks for the cavity)
- 2 small carrots, chopped
- 1 package seasoned stuffing mix (6 oz)
- ⅓ cup fresh parsley, chopped
- ½ – 1 cup chicken broth from cooked chicken
- 1 ½ tablespoons cornstarch
- 3 tablespoons water
Instructions
- In a small bowl, mix together the salt, pepper, paprika, garlic powder, onion powder, thyme, cayenne powder, and brown sugar.
- Pat the chicken dry with paper towels and rub the seasoning mixture all over the chicken, including inside the cavity.
- Place the onions, celery (including the leafy stalks), and carrots in the bottom of the crockpot.
- Stuff the chicken’s cavity with some of the leftover celery and a few sprigs of fresh parsley.
- Place the seasoned chicken on top of the vegetables in the crockpot.
- Sprinkle the stuffing mix over the top of the chicken and add chicken broth over the stuffing.
- Cover and cook on low for 6-8 hours or until the chicken reaches an internal temperature of 165°F (74°C) and the stuffing is fully cooked.
- When the chicken is done, remove it from the crockpot and let it rest for 10-15 minutes before carving.
- In a small bowl, whisk together the cornstarch and water to form a slurry. Pour the slurry into the crockpot to thicken the remaining juices and broth. Stir until thickened.
- Serve the carved chicken with the stuffing and vegetables, drizzling the thickened sauce over the top. Garnish with fresh parsley.
Notes
- You can add other vegetables, like potatoes or parsnips, to the crockpot for added flavor.
- If you prefer a crispier skin, broil the chicken in the oven for 5-7 minutes after slow cooking.
- The chicken broth from the slow-cooked chicken is the key to enhancing the stuffing’s flavor, so don’t skip it!
