Description

This Crockpot Whole Chicken with Stuffing is an incredibly easy and delicious meal that cooks itself while you go about your day. The chicken is perfectly seasoned and slow-cooked to tender perfection, while the stuffing absorbs all the savory flavors from the chicken. It’s a comforting, all-in-one dish that’s ideal for a busy weeknight or special dinner!

  • 1 whole chicken (45 lbs)
  • 1 ½ teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 ½ teaspoon thyme
  • ¼ teaspoon cayenne powder
  • ½ tablespoon brown sugar
  • 2 medium onions, quartered
  • 3 stalks celery (with leafy stalks for the cavity)
  • 2 small carrots, chopped
  • 1 package seasoned stuffing mix (6 oz)
  • ⅓ cup fresh parsley, chopped
  • ½1 cup chicken broth from cooked chicken
  • 1 ½ tablespoons cornstarch
  • 3 tablespoons water

Instructions

  • In a small bowl, mix together the salt, pepper, paprika, garlic powder, onion powder, thyme, cayenne powder, and brown sugar.
  • Pat the chicken dry with paper towels and rub the seasoning mixture all over the chicken, including inside the cavity.
  • Place the onions, celery (including the leafy stalks), and carrots in the bottom of the crockpot.
  • Stuff the chicken’s cavity with some of the leftover celery and a few sprigs of fresh parsley.
  • Place the seasoned chicken on top of the vegetables in the crockpot.
  • Sprinkle the stuffing mix over the top of the chicken and add chicken broth over the stuffing.
  • Cover and cook on low for 6-8 hours or until the chicken reaches an internal temperature of 165°F (74°C) and the stuffing is fully cooked.
  • When the chicken is done, remove it from the crockpot and let it rest for 10-15 minutes before carving.
  • In a small bowl, whisk together the cornstarch and water to form a slurry. Pour the slurry into the crockpot to thicken the remaining juices and broth. Stir until thickened.
  • Serve the carved chicken with the stuffing and vegetables, drizzling the thickened sauce over the top. Garnish with fresh parsley.

Notes

  • You can add other vegetables, like potatoes or parsnips, to the crockpot for added flavor.
  • If you prefer a crispier skin, broil the chicken in the oven for 5-7 minutes after slow cooking.
  • The chicken broth from the slow-cooked chicken is the key to enhancing the stuffing’s flavor, so don’t skip it!
