Ingredients
Scale
- 3 ½ cups all-purpose flour
- 1 cup sugar
- 2 tsp baking powder
- 2 eggs
- 2 egg yolks
- 1 ¼ cup butter (room temperature)
- Zest of 1 lemon (about 1 tbsp)
- 1 ¼ cup strawberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, sugar, and baking powder.
- Add the eggs, egg yolks, butter, and lemon zest to the flour mixture. Use your hands or a pastry cutter to combine the ingredients until a dough forms.
- Once the dough is well-mixed, divide it into two portions. Roll out the larger portion on a floured surface to fit your tart pan.
- Place the rolled dough into a tart pan, pressing it into the bottom and sides. Trim any excess dough from the edges.
- Spread the strawberry jam evenly over the bottom of the dough.
- Roll out the second portion of dough and cut it into strips to create a lattice pattern on top of the jam.
- Bake for 35-40 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool before serving.
Notes
- Feel free to use any jam flavor you prefer, such as apricot, raspberry, or peach, to customize the tart to your liking.
- Make sure the butter is soft enough to blend easily into the dough for a smooth texture.
