For the Fish Fingers:

  • 1 lb firm white fish fillets (such as cod or haddock), cut into strips
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Cooking spray or olive oil for baking

For the Golden Fries:

  • 4 large russet potatoes, peeled and cut into fries
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder

For Serving:

  • Lemon wedges
  • Tartar sauce or ketchup (optional)

Instructions

  • Prepare the Fries:
    Preheat your oven to 425°F (220°C). Place the cut potatoes in a large bowl and toss with olive oil, salt, pepper, paprika, and garlic powder. Spread the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake the Fries:
    Bake in the preheated oven for 25-30 minutes, flipping halfway through, until crispy and golden brown. Remove from oven and set aside.
  • Prepare the Fish Fingers:
    Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and a mixture of breadcrumbs, grated Parmesan, paprika, garlic powder, salt, and pepper in the third dish.
  • Bread the Fish:
    Dip each fish strip first into the flour, then the beaten eggs, and finally coat with the breadcrumb mixture. Place the coated fish fingers on a baking sheet lined with parchment paper.
  • Bake the Fish Fingers:
    Spray the fish fingers lightly with cooking spray or drizzle with a bit of olive oil. Bake in the preheated oven at 425°F (220°C) for 15-20 minutes, turning halfway through, until the fish is cooked through and the coating is crispy and golden.
  • Serve:
    Serve the crunchy fish fingers alongside the golden fries. Garnish with lemon wedges and your favorite dipping sauce, like tartar sauce or ketchup.

Notes

For a healthier twist, use a light coating of olive oil spray instead of traditional oil. Ensure the fish is fully cooked by checking that it flakes easily with a fork.
