Description

These classic Cucumber Sandwiches are light, refreshing, and perfect for tea time or a delicate snack. Creamy herbed cream cheese pairs beautifully with thinly sliced crisp cucumbers on soft white bread, creating a simple yet elegant treat.


Ingredients

  • 16 slices high-quality soft white sandwich bread (about 1 loaf), crusts removed

  • 1 English cucumber

  • 8 ounces cream cheese, softened

  • 1/4 cup mayonnaise

  • 1 tablespoon minced fresh dill

  • 1 tablespoon minced fresh chives

  • 1 tablespoon lemon juice

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon coarse salt

  • Cracked black pepper, to taste


Instructions

  • Thinly slice the English cucumber and place slices on paper towels to absorb excess moisture. Set aside.

  • In a medium bowl, combine softened cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and well blended.

  • Spread the cream cheese mixture evenly over each slice of bread.

  • Layer cucumber slices evenly over half of the bread slices. Top with the remaining bread slices to form sandwiches.

  • Press sandwiches gently, then cut each into halves or quarters as desired.

  • Serve immediately, or cover and refrigerate for up to 2 hours before serving to maintain freshness.

  • For extra crunch, peel cucumbers if desired.

  • Add fresh mint for a different herb twist.
