Description
These classic Cucumber Sandwiches are light, refreshing, and perfect for tea time or a delicate snack. Creamy herbed cream cheese pairs beautifully with thinly sliced crisp cucumbers on soft white bread, creating a simple yet elegant treat.
Ingredients
-
16 slices high-quality soft white sandwich bread (about 1 loaf), crusts removed
-
1 English cucumber
-
8 ounces cream cheese, softened
-
1/4 cup mayonnaise
-
1 tablespoon minced fresh dill
-
1 tablespoon minced fresh chives
-
1 tablespoon lemon juice
-
1/4 teaspoon garlic powder
-
1/4 teaspoon coarse salt
-
Cracked black pepper, to taste
Instructions
-
Thinly slice the English cucumber and place slices on paper towels to absorb excess moisture. Set aside.
-
In a medium bowl, combine softened cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, salt, and black pepper. Mix until smooth and well blended.
-
Spread the cream cheese mixture evenly over each slice of bread.
-
Layer cucumber slices evenly over half of the bread slices. Top with the remaining bread slices to form sandwiches.
-
Press sandwiches gently, then cut each into halves or quarters as desired.
- Serve immediately, or cover and refrigerate for up to 2 hours before serving to maintain freshness.
Notes
-
For extra crunch, peel cucumbers if desired.
-
Add fresh mint for a different herb twist.
-
Great for tea parties, picnics, or light lunches.
- To avoid soggy sandwiches, remove excess cucumber moisture and assemble just before serving.
