The combination of strong brewed coffee and sweet dates creates a perfect balance of sweetness and warmth. This cake is a treat for coffee lovers and makes for a great dessert or afternoon snack.

  • 1 cup pitted dates, chopped
  • 1 cup strong brewed coffee
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup walnuts, chopped

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a small bowl, combine the chopped dates, coffee, and baking soda. Let it sit for 15 minutes.
  • In a large bowl, cream together the butter and sugar. Beat in the eggs and vanilla until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the butter mixture, alternating with the date mixture. Stir in the walnuts.
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, prepare the espresso glaze by mixing espresso and powdered sugar until smooth.
  • Once the cake is done, let it cool slightly before drizzling the espresso glaze over the top. Enjoy!

Notes

  • Make sure to use freshly brewed strong coffee for the best flavor.
  • The espresso glaze can be made ahead of time and stored in the fridge. Warm it slightly before drizzling over the cake.
  • If you prefer, substitute walnuts with other nuts like pecans or almonds.
