    • 1 1/2 cups flour
    • 1 tsp baking powder

    • 1/2 cup brown sugar
    • 1/2 cup granulated sugar
    • 1 cup grated carrots
    • 2 large eggs
    • 1/2 cup vegetable oil
    • 1 tsp vanilla extract
  • For the Cream Cheese Frosting:
    • 8 oz cream cheese, softened
    • 1/4 cup butter, softened
    • 2 cups powdered sugar
    • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  • In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, mix eggs, brown sugar, granulated sugar, vegetable oil, and vanilla extract. Stir in grated carrots.
  • Combine the wet and dry ingredients, then pour the mixture into the prepared baking dish.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  • To make the frosting, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth. Spread evenly over the cooled bars.
