Description
A flavorful twist on the classic sloppy joe, this Cajun-inspired version features tender chicken in a spicy, savory sauce, served on a soft bun for a perfect meal.
Ingredients

8 oz (225g) rice noodles (or lo mein/udon noodles)

1 lb (450g) beef sirloin or flank steak, thinly sliced

2 tbsp cornstarch

3 tbsp vegetable oil, divided

1 red bell pepper, thinly sliced

2 cups (120g) broccoli florets
-
3 green onions, sliced (plus extra for garnish)

2 garlic cloves, minced

1 tbsp fresh ginger, grated

For the Sticky Sauce:

1/4 cup (60ml) soy sauce
-
2 tbsp hoisin sauce

2 tbsp honey or brown sugar

2 tbsp rice vinegar (or lime juice)

1 tbsp sesame oil
-
1/4 tsp red pepper flakes (optional, for heat)

Instructions

Cook rice noodles according to the package instructions, drain, and set aside.

Toss thinly sliced beef with cornstarch to coat evenly.

Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add beef and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.

In the same skillet, add another tbsp of vegetable oil and sauté the bell pepper, broccoli, and green onions until tender, about 5 minutes.

Add garlic and ginger, and cook for another 1-2 minutes until fragrant.

In a small bowl, whisk together soy sauce, hoisin sauce, honey (or brown sugar), rice vinegar, sesame oil, and red pepper flakes to make the sauce.

Return the beef to the skillet, pour the sauce over the mixture, and toss to coat. Cook for an additional 2-3 minutes to heat through and thicken the sauce.

Toss the cooked noodles with the beef and vegetable mixture. Serve immediately, garnished with extra green onions.
Notes

For a spicier dish, increase the amount of red pepper flakes.
