Ingredients

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 12 red chilies (depending on your spice tolerance), finely chopped
  • 1 lb ground beef (or a mix of beef and pork)
  • 2 tbsp tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 cup beef broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 2 tsp chili powder (adjust to taste)
  • 1 tsp oregano
  • 1 tsp cocoa powder
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add the onion, garlic, and peppers, and cook until softened.
  • Add the ground beef and cook until browned, breaking it up as it cooks.
  • Stir in the tomato paste, diced tomatoes, kidney beans, and beef broth.
  • Add the spices, cocoa powder, and season with salt and pepper.
  • Stir well, reduce the heat, and let the chili simmer for at least 30 minutes, stirring occasionally.
  • Serve hot with your favorite toppings.
