- 1 large onion, finely chopped

- 2 tbsp tomato paste
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 cup beef broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 2 tsp chili powder (adjust to taste)
- 1 tsp oregano
- 1 tsp cocoa powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion, garlic, and peppers, and cook until softened.
- Add the ground beef and cook until browned, breaking it up as it cooks.
- Stir in the tomato paste, diced tomatoes, kidney beans, and beef broth.
- Add the spices, cocoa powder, and season with salt and pepper.
- Stir well, reduce the heat, and let the chili simmer for at least 30 minutes, stirring occasionally.
- Serve hot with your favorite toppings.
