For the Cookie Crust:
- 2 cups crushed chocolate sandwich cookies
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed chocolate sandwich cookies
For the Blue Cookie Monster Frosting:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 2–3 tablespoons milk
- 1 teaspoon vanilla extract
- Blue food coloring
- Extra chocolate sandwich cookies for decoration
Instructions
For the Cookie Crust:
- Preheat Oven:
- Preheat oven to 325°F (165°C). Grease and line the bottom of a 9-inch springform pan.
- Prepare the Crust:
- Mix crushed cookies, granulated sugar, and melted butter until well combined.
- Press the mixture firmly into the bottom of the prepared pan.
- Bake for 10 minutes, then remove from oven and let cool.
For the Cheesecake Filling:
- Prepare the Filling:
- In a large bowl, beat cream cheese and granulated sugar until smooth.
- Add sour cream and mix well.
- Beat in eggs, one at a time, then stir in vanilla extract and crushed cookies.
- Bake the Cheesecake:
- Pour the cheesecake batter over the cooled crust, spreading it evenly.
- Bake for 50-60 minutes, or until the center is set.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
- Chill:
- Remove from oven and refrigerate for at least 4 hours or overnight.
For the Blue Cookie Monster Frosting:
- Prepare the Frosting:
- Beat butter until creamy.
- Gradually add powdered sugar, milk, and vanilla extract. Mix until smooth.
- Add blue food coloring and mix until the desired shade is achieved.
- Frost the Cheesecake:
- Frost the chilled cheesecake with blue frosting.
- Create a “monster” look with extra cookies for eyes and a mouth.
