For the Cookie Crust:

  • 2 cups crushed chocolate sandwich cookies
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crushed chocolate sandwich cookies

For the Blue Cookie Monster Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tablespoons milk
  • 1 teaspoon vanilla extract
  • Blue food coloring
  • Extra chocolate sandwich cookies for decoration

Instructions

For the Cookie Crust:

  1. Preheat Oven:
    • Preheat oven to 325°F (165°C). Grease and line the bottom of a 9-inch springform pan.
  2. Prepare the Crust:
    • Mix crushed cookies, granulated sugar, and melted butter until well combined.
    • Press the mixture firmly into the bottom of the prepared pan.
    • Bake for 10 minutes, then remove from oven and let cool.

For the Cheesecake Filling:

  1. Prepare the Filling:
    • In a large bowl, beat cream cheese and granulated sugar until smooth.
    • Add sour cream and mix well.
    • Beat in eggs, one at a time, then stir in vanilla extract and crushed cookies.
  2. Bake the Cheesecake:
    • Pour the cheesecake batter over the cooled crust, spreading it evenly.
    • Bake for 50-60 minutes, or until the center is set.
    • Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  3. Chill:
    • Remove from oven and refrigerate for at least 4 hours or overnight.

For the Blue Cookie Monster Frosting:

  1. Prepare the Frosting:
    • Beat butter until creamy.
    • Gradually add powdered sugar, milk, and vanilla extract. Mix until smooth.
    • Add blue food coloring and mix until the desired shade is achieved.
  2. Frost the Cheesecake:
    • Frost the chilled cheesecake with blue frosting.
    • Create a “monster” look with extra cookies for eyes and a mouth.

Notes
