  • 3 medium potatoes, peeled and diced

  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/4 cup beef broth or water (optional)
  • Chopped green onions for garnish

Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat.
  • Add onion and garlic, sauté for 2-3 minutes until fragrant.
  • Add ground beef and cook, breaking it apart, for about 5-7 minutes until browned.
  • Stir in diced potatoes and red bell pepper, season with paprika, cumin, salt, and pepper.
  • If needed, add beef broth or water, cover, and simmer for 15-20 minutes, stirring occasionally.
  • Remove the lid and cook a few minutes longer to evaporate excess moisture.
  • Taste and adjust seasoning as needed.
