Description

This Dorito Taco Salad combines seasoned lean ground beef, fresh crunchy iceberg lettuce, juicy tomatoes, shredded cheddar, and crushed nacho cheese Doritos for a flavorful and satisfying Tex-Mex inspired meal. Tossed with light Catalina dressing, it’s a perfect easy lunch or dinner.

  • 1 lb 95% lean ground beef

  • 1 (1.25 oz) packet reduced sodium taco seasoning

  • 1 medium-large head iceberg lettuce, chopped into bite-sized pieces

  • 1 medium-large tomato, diced

  • 4 oz 50% less fat sharp cheddar cheese, shredded

  • 4 oz nacho cheese Doritos, broken into bite-sized pieces

  • 1 cup light Catalina or French dressing (Kraft Lite Catalina recommended)


Instructions

  • Cook Beef:
    In a skillet over medium heat, cook ground beef until browned and fully cooked, breaking it apart as it cooks. Drain any excess fat.

  • Season Beef:
    Add taco seasoning and the amount of water specified on the seasoning packet (usually about 2/3 cup). Simmer until thickened and flavorful. Remove from heat and let cool slightly.

  • Prepare Salad Base:
    Chop iceberg lettuce into bite-sized pieces and place in a large salad bowl. Add diced tomato and shredded cheddar cheese.

  • Assemble Salad:
    Add the cooked, seasoned beef on top of the lettuce mixture. Sprinkle broken Doritos over the salad.

  • Dress and Toss:
    Pour light Catalina dressing over the salad. Toss gently to combine just before serving to keep the Doritos crunchy.

Notes

  • For extra flavor, add sliced jalapeños or black olives.

  • Substitute ground turkey or chicken for beef if desired.
