- 2 tbsp balsamic vinegar
- 1/4 cup sugar
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 can refrigerated biscuit dough
- Oil for frying
Instructions
- Prepare the blueberry filling: In a small saucepan, combine the blueberries, balsamic vinegar, and sugar. Cook over low heat, stirring occasionally, until the blueberries burst and the mixture thickens. Remove from heat and let it cool.
- Make the cheesecake filling: In a medium bowl, mix together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Assemble the doughnuts: Roll out the biscuit dough on a floured surface and cut it into rounds using a biscuit cutter.
- Fill the doughnuts: Place a spoonful of the cheesecake mixture onto half of the dough rounds, then top with a spoonful of the cooled blueberry mixture. Place another dough round on top and press the edges together to seal.
- Fry the doughnuts: Heat oil in a large skillet over medium heat. Fry the doughnuts in batches, turning them occasionally, until golden brown on both sides. Remove from the oil and drain on paper towels.
