Description

These Duchess Potatoes are creamy, flavorful, and beautifully piped into elegant shapes before baking to a golden perfection. A luxurious twist on mashed potatoes, perfect for special occasions or as a standout side dish.


Ingredients

  • 2 pounds russet potatoes
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 2 egg yolks
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  • Prepare the Potatoes:
    Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15 minutes.
  • Mash the Potatoes:
    Drain the potatoes and mash them until smooth.
  • Heat the Cream and Butter:
    In a small saucepan, heat the heavy cream and butter over low heat until the butter melts.
  • Combine the Cream Mixture:
    Gradually add the cream mixture to the mashed potatoes, mixing well until the potatoes are creamy and smooth.
  • Add Egg Yolks and Seasonings:
    Stir in the egg yolks, salt, pepper, and a pinch of nutmeg.
  • Pipe the Potatoes:
    Transfer the mixture to a piping bag. Pipe the mashed potatoes into decorative mounds onto a baking sheet lined with parchment paper.
  • Bake:
    Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until the potatoes are golden brown on top.

Notes

  • If you don’t have a piping bag, you can also use a spoon to form small mounds.
  • For extra flavor, you can sprinkle the potatoes with grated Parmesan cheese before baking.
