- 2 pounds russet potatoes
- 1/2 cup heavy cream
- 1/4 cup butter
- 2 egg yolks
- Salt and pepper to taste
- Pinch of nutmeg
Instructions
- Prepare the Potatoes:
Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15 minutes. - Mash the Potatoes:
Drain the potatoes and mash them until smooth. - Heat the Cream and Butter:
In a small saucepan, heat the heavy cream and butter over low heat until the butter melts. - Combine the Cream Mixture:
Gradually add the cream mixture to the mashed potatoes, mixing well until the potatoes are creamy and smooth. - Add Egg Yolks and Seasonings:
Stir in the egg yolks, salt, pepper, and a pinch of nutmeg. - Pipe the Potatoes:
Transfer the mixture to a piping bag. Pipe the mashed potatoes into decorative mounds onto a baking sheet lined with parchment paper. - Bake:
Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until the potatoes are golden brown on top.
Notes
- If you don’t have a piping bag, you can also use a spoon to form small mounds.
- For extra flavor, you can sprinkle the potatoes with grated Parmesan cheese before baking.
