Description

This colorful and festive Easter Poke Cake is a sweet, vibrant treat that’s perfect for any spring celebration. With layers of moist cake soaked in fruity Jello and topped with a fluffy whipped topping, it’s a fun and delicious way to bring a little joy to your Easter festivities!

  • 1 box white cake mix (plus ingredients required for cake mix)
  • 1 (3 oz) box strawberry or berry-flavored Jello (or any desired color)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 (8 oz) container whipped topping (like Cool Whip)
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • Easter-themed sprinkles (optional, for decoration)

Instructions

  • Preheat your oven and prepare the cake mix according to the instructions on the box. Bake the cake in a 9×13-inch baking dish.
  • Once the cake is baked, remove it from the oven and let it cool for about 10 minutes. Then, using the handle of a wooden spoon or a fork, poke holes all over the cake, about 1-inch apart.
  • In a separate bowl, dissolve the Jello in 1 cup of boiling water, stirring until completely dissolved. Add 1/2 cup of cold water to the Jello mixture.
  • Pour the Jello mixture evenly over the cake, allowing it to soak into the holes. Let the cake cool completely, about 30 minutes.
  • In another bowl, mix the whipped topping with sweetened condensed milk and vanilla extract until smooth.
  • Spread the whipped topping mixture evenly over the cake, covering it completely.
  • Decorate the cake with Easter-themed sprinkles or decorations.
  • Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld together.
  • Serve chilled and enjoy!

Notes

  • You can use any flavor of Jello that you prefer, and you can even create multiple colors for a more festive look.
