Description

  • 6 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp lemon juice
  • Gel food coloring in pastel shades (pink, blue, yellow, or purple)

Instructions

  • Prepare the crust: In a bowl, combine graham cracker crumbs (or vanilla wafer crumbs) and granulated sugar. Add melted butter and stir until the mixture is evenly coated. Press the mixture into the bottom of a pie pan, forming an even crust. Set aside.
  • Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar, vanilla extract, and lemon juice, and mix until fully incorporated.
  • In a separate bowl, whip the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture, creating a light, airy filling.
  • Add color: Divide the filling into separate bowls. Add a few drops of food coloring to each bowl to create pastel shades. Swirl the different colored fillings into the pie, creating a beautiful marbled effect.
  • Assemble the pie: Pour the colorful filling into the prepared crust. Use a spatula to smooth the top, or create a swirl pattern with a spoon.
  • Chill: Refrigerate the pie for at least 3 hours or until firm before serving.
