Description

A simple yet flavorful dish, this easy baked honey Dijon chicken combines the sweetness of honey with the tang of Dijon mustard for a perfect balance of taste. With minimal prep time and a savory gravy, it’s an excellent weeknight dinner option that everyone will love.


Ingredients

    • 2 tablespoons olive oil, divided

    • 1 onion, diced

    • 1 pound ground beef

    • 1 pound ground pork

    • ½ cup Panko

    • 2 large egg yolks

    • ¼ teaspoon ground allspice

    • ¼ teaspoon ground nutmeg

    • Kosher salt and freshly ground black pepper, to taste

For the Gravy:

    • ¼ cup unsalted butter

    • ⅓ cup all-purpose flour

    • 4 cups beef broth

    • ¾ cup sour cream

    • Kosher salt and freshly ground black pepper, to taste

    • 2 tablespoons chopped fresh parsley leaves


Instructions

  • Preheat your oven to 375°F (190°C).

  • Heat 1 tablespoon of olive oil in a pan over medium heat. Add the diced onion and sauté until softened and golden. Remove from heat and set aside.

  • In a large bowl, combine the ground beef, ground pork, Panko, egg yolks, ground allspice, and ground nutmeg. Add salt and pepper to taste. Mix well.

  • Shape the meat mixture into small meatballs (about 1 inch in diameter) and place them on a baking sheet.

  • Drizzle with the remaining tablespoon of olive oil and bake for 20-25 minutes or until the meatballs are cooked through and golden brown.

  • While the meatballs bake, make the gravy. In a saucepan, melt butter over medium heat. Stir in the flour to make a roux. Cook for 1-2 minutes until the mixture is golden.

  • Gradually whisk in the beef broth, making sure to stir constantly to avoid lumps. Bring to a simmer and cook for about 5 minutes until the gravy thickens.

  • Stir in the sour cream, salt, and pepper. Adjust seasoning if necessary.

  • Remove the meatballs from the oven and serve with the gravy. Garnish with chopped parsley.

Notes

  • For a lighter version, you can substitute ground turkey or chicken for the beef and pork.

  • Serve with mashed potatoes or rice for a complete meal.

  • If you prefer a thicker gravy, cook it a little longer to reduce it.
