- 8 slices bacon
- 8 ounces frozen potatoes O’Brien (defrosted)
- 8 large eggs
- ½ cup shredded cheese (more if needed)
- 6 large flour tortillas (warmed)
Instructions
- In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Once cooked, remove from the skillet and drain on paper towels. Once cooled, crumble or chop the bacon into smaller pieces.
- In the same skillet, add the defrosted potatoes O’Brien and cook according to package instructions until crispy and golden brown. Set aside.
- While the potatoes are cooking, crack the eggs into a bowl and whisk them together. In a separate skillet, cook the scrambled eggs over medium heat, stirring occasionally, until fully cooked and fluffy.
- To assemble the burritos, warm the flour tortillas in the microwave or on a dry skillet for a few seconds on each side.
- In each tortilla, layer a portion of the scrambled eggs, crispy bacon, cooked potatoes, and a generous sprinkle of shredded cheese.
- Roll up the tortilla, folding in the sides and then rolling it tightly.
- Serve immediately, or wrap in foil to take on the go!
