Start your day with these delicious and satisfying Easy Breakfast Burritos! Filled with crispy bacon, scrambled eggs, savory potatoes, and melted cheese, these burritos are the perfect grab-and-go breakfast option for busy mornings or a leisurely brunch.


Ingredients

  • 8 slices bacon
  • 8 ounces frozen potatoes O’Brien (defrosted)
  • 8 large eggs
  • ½ cup shredded cheese (more if needed)
  • 6 large flour tortillas (warmed)

Instructions

  • In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Once cooked, remove from the skillet and drain on paper towels. Once cooled, crumble or chop the bacon into smaller pieces.
  • In the same skillet, add the defrosted potatoes O’Brien and cook according to package instructions until crispy and golden brown. Set aside.
  • While the potatoes are cooking, crack the eggs into a bowl and whisk them together. In a separate skillet, cook the scrambled eggs over medium heat, stirring occasionally, until fully cooked and fluffy.
  • To assemble the burritos, warm the flour tortillas in the microwave or on a dry skillet for a few seconds on each side.
  • In each tortilla, layer a portion of the scrambled eggs, crispy bacon, cooked potatoes, and a generous sprinkle of shredded cheese.
  • Roll up the tortilla, folding in the sides and then rolling it tightly.
  • Serve immediately, or wrap in foil to take on the go!

Notes

  • Feel free to add other ingredients like sautéed onions, peppers, or avocado for extra flavor and texture.
  • For a spicier version, add some hot sauce or jalapeños.
  • You can prepare the filling ahead of time and simply warm it up in the morning for a quicker breakfast.
