Description

These Easy Gluten-Free Chicken Taquitos are a crispy, flavorful, and healthy treat perfect for any occasion. Packed with shredded chicken, fresh vegetables, and spices, these taquitos are wrapped in cassava flour tortillas for a gluten-free twist.

  • 8 Cassava Flour Tortillas (Brands: Siete Foods or Rise & Puff)
    Filling Ingredients:

  • 2 Cups Shredded Chicken

  • ½ Cup Diced Bell Pepper

  • ⅓ Cup Diced Red Onion

  • ¼ Cup Mayo (Primal Kitchen avocado oil mayo recommended)

  • 3 Tablespoons Lime Juice (Fresh squeezed is best!)

  • 2 Tablespoons Chopped Cilantro

  • 1 Teaspoon Chili Powder

  • ½ Teaspoon Garlic Powder

  • ½ Teaspoon Salt


Instructions

  • Preheat your oven to 375°F (190°C).

  • In a bowl, combine shredded chicken, diced bell pepper, diced red onion, mayo, lime juice, chopped cilantro, chili powder, garlic powder, and salt. Mix until everything is well incorporated.

  • Take a cassava flour tortilla and spoon the chicken mixture into the center. Roll up tightly, securing the filling inside.

  • Place the rolled taquitos on a baking sheet lined with parchment paper.

  • Bake for 15-20 minutes or until the taquitos are golden and crispy.

  • Serve with your favorite dipping sauce, like guacamole or salsa.

  • For an extra crispy texture, you can lightly spray the taquitos with olive oil before baking.
