Description

Easy Mexican Taco Lasagna combines the comforting layers of lasagna with the bold flavors of tacos. Featuring ground beef, black beans, corn, and cheesy goodness, this dish is perfect for a satisfying family dinner or a fun twist on taco night.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 810 small tortillas (corn or flour)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1 cup salsa
  • 1/2 cup chopped fresh cilantro (optional)
  • Sliced jalapeños (optional for extra heat)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef with the diced onion and minced garlic until the meat is browned and the onion is translucent. Drain any excess fat.
  • Stir in the taco seasoning mix, diced tomatoes, black beans, and corn. Cook for about 5 minutes, until everything is well combined and heated through.
  • Spread a thin layer of salsa on the bottom of a 9×13 inch baking dish.
  • Place a layer of tortillas over the salsa. You may need to cut them to fit the dish.
  • Spoon a portion of the beef mixture over the tortillas, then spread a layer of sour cream on top.
  • Sprinkle with a layer of shredded cheddar cheese and mozzarella cheese.
  • Repeat the layering process with tortillas, beef mixture, sour cream, and cheese, finishing with a final layer of cheese on top.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  • Let the lasagna cool for a few minutes before slicing. Garnish with chopped cilantro and sliced jalapeños if desired.

Notes

For a spicier kick, add a layer of sliced jalapeños or extra hot salsa. You can also substitute ground turkey or chicken for a lighter option.
