- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1/2 teaspoon vanilla extract
- 1 1/2 cups pecan halves
- A pinch of salt
Instructions
- Prepare the Ingredients:
- Line a baking sheet with parchment paper or a silicone baking mat.
- Cook the Pralines:
- In a medium saucepan, combine the granulated sugar, brown sugar, and heavy cream. Cook over medium heat, stirring constantly until the sugars dissolve.
- Once the mixture starts to boil, stop stirring and let it cook until it reaches 240°F (115°C) on a candy thermometer, about 5-7 minutes.
- Add the Butter and Vanilla:
- Remove the saucepan from the heat. Stir in the unsalted butter, vanilla extract, and a pinch of salt until the butter is fully melted and incorporated.
- Mix in the Pecans:
- Fold in the pecan halves until they are evenly coated with the caramel mixture.
- Form the Pralines:
- Drop spoonfuls of the mixture onto the prepared baking sheet. Shape them into rounds or clusters as desired.
- Cool and Serve:
- Allow the pralines to cool completely at room temperature. They will harden as they cool.
Notes
Store pralines in an airtight container at room temperature for up to 1 week. For a smoother texture, use a candy thermometer to ensure precise cooking temperature.
