Description

Craving a sweet treat that’s the perfect blend of caramel and pecans? These easy pecan pralines are just the thing—deliciously gooey and crunchy, they pair beautifully with a cup of coffee or tea!


Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups pecan halves
  • A pinch of salt

Instructions

  • Prepare the Ingredients:
    • Line a baking sheet with parchment paper or a silicone baking mat.
  • Cook the Pralines:
    • In a medium saucepan, combine the granulated sugar, brown sugar, and heavy cream. Cook over medium heat, stirring constantly until the sugars dissolve.
    • Once the mixture starts to boil, stop stirring and let it cook until it reaches 240°F (115°C) on a candy thermometer, about 5-7 minutes.
  • Add the Butter and Vanilla:
    • Remove the saucepan from the heat. Stir in the unsalted butter, vanilla extract, and a pinch of salt until the butter is fully melted and incorporated.
  • Mix in the Pecans:
    • Fold in the pecan halves until they are evenly coated with the caramel mixture.
  • Form the Pralines:
    • Drop spoonfuls of the mixture onto the prepared baking sheet. Shape them into rounds or clusters as desired.
  • Cool and Serve:
    • Allow the pralines to cool completely at room temperature. They will harden as they cool.

Notes

Store pralines in an airtight container at room temperature for up to 1 week. For a smoother texture, use a candy thermometer to ensure precise cooking temperature.
