Dough

⅓ cup milk

3 Tbsp granulated sugar

⅓ cup butter

3½ tsp instant yeast

¾ cup warm water (105–115 °F)

Filling

¾ cup packed brown sugar

¼ cup granulated sugar

1 Tbsp cinnamon

¼ cup butter, softened
Topping

6 Tbsp butter, melted

½ cup packed brown sugar

¼ cup granulated sugar

¼ cup dark corn syrup

¼ tsp salt

2 Tbsp water

1 cup coarsely chopped pecans (optional)
Instructions

Prepare dough: In a saucepan, warm milk, sugar, and butter until melted; cool slightly.

Activate yeast: Stir yeast into warm water; let sit until foamy (~5 min).

In a large bowl, combine milk mixture, yeast mixture, flour, and salt. Mix until a soft dough forms. Knead 5–7 minutes until smooth and elastic.

Place dough in a greased bowl, cover, and let rise until doubled (~1 hr).

Make filling: Stir together brown sugar, granulated sugar, cinnamon, and softened butter.

Roll & fill: Roll dough into a 15×18″ rectangle. Spread filling evenly, leaving a ½″ border. Roll tightly and cut into 12 slices.

Assemble topping: Combine melted butter, brown sugar, granulated sugar, corn syrup, salt, and water. Pour into a greased 9×13″ pan, sprinkle pecans evenly, then place buns cut-side down in the pan.

Cover and let rise until nearly doubled (30–45 min).

Bake: Preheat oven to 375 °F. Bake for 35–40 min until golden and caramel is bubbly.
- Finish: Let buns cool 5 min, then invert onto a serving platter so topping cascades over rolls. Serve warm or at room temperature.

Letting the dough rise twice (in bowl and in pan) gives the fluffiest texture.
