- 1 lb (450g) boneless chicken thighs or breasts, cut into bite-sized pieces
- 1 cup uncooked jasmine rice
- 2 cups water or chicken broth
- 1/4 cup soy sauce (or tamari for gluten-free)
- 1/4 cup honey or maple syrup
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- Green onions and sesame seeds for garnish (optional)
Instructions
- In a medium saucepan, cook the jasmine rice with 2 cups of water or chicken broth according to the package instructions.
- While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add the chicken pieces and cook until golden and cooked through, about 6-7 minutes.
- In a small bowl, whisk together the soy sauce (or tamari), honey (or maple syrup), and minced garlic.
- Pour the sauce over the cooked chicken in the skillet. Stir to coat the chicken in the sauce.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add the slurry to the skillet and stir to thicken the sauce, cooking for an additional 1-2 minutes.
- Serve the sticky chicken over the cooked jasmine rice. Garnish with green onions and sesame seeds if desired.
Notes
- For a gluten-free version, ensure you’re using tamari instead of soy sauce.
- You can substitute the honey with maple syrup if you prefer a vegan option.
