Description

This Easy Sticky Chicken Rice Bowl is a simple yet delicious dish featuring tender chicken pieces coated in a sweet and savory sauce, served over fluffy jasmine rice. Perfect for a weeknight dinner or meal prep, it’s easy to make and packed with flavor.


Ingredients

  • 1 lb (450g) boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup uncooked jasmine rice
  • 2 cups water or chicken broth
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Green onions and sesame seeds for garnish (optional)

Instructions

  • In a medium saucepan, cook the jasmine rice with 2 cups of water or chicken broth according to the package instructions.
  • While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add the chicken pieces and cook until golden and cooked through, about 6-7 minutes.
  • In a small bowl, whisk together the soy sauce (or tamari), honey (or maple syrup), and minced garlic.
  • Pour the sauce over the cooked chicken in the skillet. Stir to coat the chicken in the sauce.
  • In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Add the slurry to the skillet and stir to thicken the sauce, cooking for an additional 1-2 minutes.
  • Serve the sticky chicken over the cooked jasmine rice. Garnish with green onions and sesame seeds if desired.

Notes

  • For a gluten-free version, ensure you’re using tamari instead of soy sauce.
  • You can substitute the honey with maple syrup if you prefer a vegan option.
  • Adjust the sweetness of the sauce by adding more or less honey/maple syrup, according to taste.
