For the Casserole Base:

  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 large bell peppers, chopped (any color)
  • 2 cups cooked white or brown rice
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1 (15 oz) can tomato sauce
  • 1 cup beef or chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it up as it cooks. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet and cook for 2-3 minutes, until softened.
  • Stir in the chopped bell peppers and cook for another 5 minutes until slightly tender.
  • Add the cooked rice, diced tomatoes (with juice), tomato sauce, and broth to the skillet. Stir in Italian seasoning, paprika, salt, and pepper. Mix well to combine.
  • Transfer the mixture to a 9×13-inch casserole dish and spread evenly.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the casserole is bubbly and heated through.
  • Serve hot and enjoy!

Notes

  • You can swap the ground beef for turkey or chicken for a leaner option.
  • Add shredded cheese on top during the last 5 minutes of baking for a cheesy version.
