For the Casserole Base:
- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 large bell peppers, chopped (any color)
- 2 cups cooked white or brown rice
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1 (15 oz) can tomato sauce
- 1 cup beef or chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef or turkey over medium heat until browned, breaking it up as it cooks. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet and cook for 2-3 minutes, until softened.
- Stir in the chopped bell peppers and cook for another 5 minutes until slightly tender.
- Add the cooked rice, diced tomatoes (with juice), tomato sauce, and broth to the skillet. Stir in Italian seasoning, paprika, salt, and pepper. Mix well to combine.
- Transfer the mixture to a 9×13-inch casserole dish and spread evenly.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the casserole is bubbly and heated through.
- Serve hot and enjoy!

- You can swap the ground beef for turkey or chicken for a leaner option.
- Add shredded cheese on top during the last 5 minutes of baking for a cheesy version.
