Description

Egg and Bacon Bites are a quick, delicious, and protein-packed breakfast or snack! These savory little bites are loaded with eggs, crispy bacon, and sharp cheddar cheese, all held together with a creamy touch of cottage cheese and a dash of hot sauce. Perfect for meal prep, these bites are sure to keep you fueled throughout the day.


Ingredients

  • 6 large eggs
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup cottage cheese
  • 1 teaspoon hot sauce (such as Tabasco or Tapatio)
  • 5 slices bacon (cut into small pieces and cooked)
  • 1 cup sharp cheddar cheese (grated)

Instructions

  • Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
  • In a large bowl, whisk together the eggs, salt, and pepper.
  • Stir in the cottage cheese and hot sauce until well combined.
  • Add the cooked bacon pieces and grated cheddar cheese to the egg mixture. Stir to combine.
  • Divide the egg mixture evenly among the muffin tin cups (about 2/3 full for each).
  • Bake in the preheated oven for 18-20 minutes, or until the bites are set in the middle and lightly golden on top.
  • Allow to cool slightly before removing from the muffin tin.
  • Serve warm or store in an airtight container in the fridge for up to 4 days. These bites are also great for meal prep and can be frozen for up to 3 months!

Notes

  • You can customize these bites with different add-ins such as diced vegetables (e.g., bell peppers, onions, or spinach) or switch up the cheese (cheddar, mozzarella, or pepper jack).
  • For a dairy-free option, try substituting the cottage cheese with a dairy-free alternative and use a non-dairy cheese.
  • If you prefer crispier bacon, bake the bacon slices in the oven or cook them in a skillet before cutting them into small pieces.
