- 6 large eggs
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup cottage cheese
- 1 teaspoon hot sauce (such as Tabasco or Tapatio)
- 5 slices bacon (cut into small pieces and cooked)
- 1 cup sharp cheddar cheese (grated)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
- In a large bowl, whisk together the eggs, salt, and pepper.
- Stir in the cottage cheese and hot sauce until well combined.
- Add the cooked bacon pieces and grated cheddar cheese to the egg mixture. Stir to combine.
- Divide the egg mixture evenly among the muffin tin cups (about 2/3 full for each).
- Bake in the preheated oven for 18-20 minutes, or until the bites are set in the middle and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin.
- Serve warm or store in an airtight container in the fridge for up to 4 days. These bites are also great for meal prep and can be frozen for up to 3 months!
