Description

Egg Roll Stir Fry brings the delicious flavors of an egg roll without the extra work. This quick and easy dish combines savory ground meat, fresh vegetables, and a flavorful sauce for a comforting, healthy meal in just 25 minutes. A perfect weeknight dinner!

Ingredients

Scale
  • 1 pound ground meat (chicken, turkey, or pork)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 medium head of green cabbage, thinly sliced
  • 2 medium carrots, shredded
  • ¼ cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Optional: sesame seeds (for garnish)

Instructions

  • Cook the ground meat: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the ground meat and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove the meat from the skillet and set aside.

  • Sauté the vegetables: In the same skillet, add the chopped onion, minced garlic, and grated ginger. Cook for 2-3 minutes, until the onion becomes translucent.

  • Add the cabbage and carrots: Stir in the thinly sliced cabbage and shredded carrots. Cook for another 5-6 minutes, stirring occasionally, until the vegetables are softened.

  • Add the sauces: Pour in the soy sauce, sesame oil, and rice vinegar. Stir well to combine. For extra heat, you can add the crushed red pepper flakes at this point.

  • Combine with meat: Add the cooked ground meat back into the skillet. Stir everything together and cook for an additional 2-3 minutes to allow the flavors to meld together.

  • Serve: Garnish with sliced green onions and sesame seeds if desired. Serve immediately.

Notes

  • You can use any ground meat you prefer: chicken, turkey, or pork all work well.
  • Adjust the amount of soy sauce or sesame oil based on your taste preferences.
  • For a low-carb version, you can serve this stir fry over cauliflower rice instead of regular rice.
