Description

This Egg Roll Stir Fry is a quick, delicious, and healthy twist on traditional egg rolls. Packed with lean protein, fresh vegetables, and bold flavors, it’s the perfect easy dinner or meal prep option.


Ingredients

  • 1 pound ground meat (chicken, turkey, or pork)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 medium head of green cabbage, thinly sliced
  • 2 medium carrots, shredded
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Optional: sesame seeds, for garnish

Instructions

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add the ground meat and cook, breaking it apart with a spoon, until fully cooked and browned. Remove from the pan and set aside.
  • In the same pan, add the chopped onion and cook until softened, about 3-4 minutes.
  • Add the garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  • Stir in the sliced cabbage and shredded carrots. Cook, stirring occasionally, until the vegetables are tender but still crisp, about 5-7 minutes.
  • Return the cooked ground meat to the pan.
  • Add the soy sauce, sesame oil, rice vinegar, and red pepper flakes (if using). Stir to combine and heat through.
  • Taste and adjust seasoning, adding more soy sauce or vinegar if desired.
  • Garnish with sliced green onions and sesame seeds (optional) before serving.

Notes

  • Feel free to swap the ground meat for a vegetarian alternative like tofu or tempeh for a plant-based version.
  • For extra crunch, serve with a side of crispy rice or over a bed of quinoa.
  • To make this a complete meal, consider adding some cooked rice to the stir fry.
