Description

  • 1 box yellow cake mix
  • 1/2 cup vegetable oil
  • 1 cup water
  • 3 large eggs
  • 1 cup mashed ripe bananas (about 2 medium bananas)

For the Frosting:

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup cream cheese, room temperature
  • 2 cups powdered sugar
  • 1/2 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  • Prepare Cake Batter: In a large bowl, combine the cake mix, vegetable oil, water, and eggs. Beat with an electric mixer on medium speed for 2 minutes. Gently fold in the mashed bananas.
  • Bake Cake: Pour the batter into the prepared baking dish. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
  • Make Frosting: In a medium bowl, beat together the butter and cream cheese until smooth and creamy. Gradually add the powdered sugar and beat until fluffy. Stir in the crushed pineapple and vanilla extract.
  • Frost Cake: Once the cake has cooled, spread the frosting evenly over the top. Garnish with chopped walnuts or pecans if desired.
