This flavorful casserole combines tender chicken, colorful bell peppers, onions, and a zesty fajita seasoning. Topped with melted cheddar cheese, it’s a hearty and satisfying dish perfect for any night of the week.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 packet fajita seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 375°F.
  • Cut chicken into bite-sized pieces and cook in olive oil over medium heat until browned.
  • Add fajita seasoning, peppers, and onion to the skillet and cook until vegetables are tender.
  • Stir in diced tomatoes and simmer for 5 minutes.
  • Transfer mixture to a baking dish and top with shredded cheese.
  • Bake for 20 minutes or until cheese is melted and bubbly.
  • Serve hot and enjoy!
