- 2 tbsp olive oil
- 1 packet fajita seasoning
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced

- 1 can diced tomatoes
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- Cut chicken into bite-sized pieces and cook in olive oil over medium heat until browned.
- Add fajita seasoning, peppers, and onion to the skillet and cook until vegetables are tender.
- Stir in diced tomatoes and simmer for 5 minutes.
