  • ⅓ cup green and black olives, chopped
  • ¼ cup fresh parsley, chopped (for garnish)
  • 12 tbsp olive oil (for drizzling)

  • ¼ cup grated Parmesan cheese (optional)
  • Salt and pepper, to taste

Instructions

  • In a medium mixing bowl, combine the softened cream cheese, roasted red peppers, olives, garlic powder, Italian seasoning, and a pinch of salt and pepper. Mix well until all ingredients are incorporated.
  • Transfer the mixture onto plastic wrap or parchment paper and shape it into a log shape using your hands or a spatula, ensuring it’s firm and even.
  • Wrap the log tightly in plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the log to hold its shape.
  • Once chilled, unwrap the log and place it on a serving platter.
  • Drizzle with olive oil, sprinkle with chopped parsley, and if desired, top with grated Parmesan cheese.
  • Serve with crackers, slices of baguette, or vegetable sticks for dipping.
  • Enjoy this savory and festive appetizer!

Notes

  • You can substitute the roasted red peppers with sun-dried tomatoes for a different flavor.
  • If you like a bit of heat, consider adding a few finely chopped hot peppers to the mixture.
