Description

Savor the delicious combination of tender shrimp seasoned with Cajun spices, all atop fluffy baked potatoes and melted cheese. This hearty dish is perfect for a satisfying dinner or a fun twist on a classic baked potato.


Ingredients

  • 4 large russet potatoes
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 1/4 cup butter, melted
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F.
  • Scrub the potatoes and pierce them with a fork. Bake for 50-60 minutes, or until tender.
  • In a bowl, toss the shrimp with Cajun seasoning.
  • In a skillet, cook the shrimp in melted butter until pink and cooked through.
  • Cut a slit in the top of each potato and fluff the insides with a fork.
  • Top each potato with shrimp, cheese, green onions, salt, and pepper.
  • Place back in the oven until the cheese is melted.
  • Serve hot and enjoy!

Notes

Feel free to add additional toppings like sour cream or crispy bacon for extra flavor and texture.
