- 4 large russet potatoes
- 1 lb shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 1/4 cup butter, melted
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- Scrub the potatoes and pierce them with a fork. Bake for 50-60 minutes, or until tender.
- In a bowl, toss the shrimp with Cajun seasoning.
- In a skillet, cook the shrimp in melted butter until pink and cooked through.
- Cut a slit in the top of each potato and fluff the insides with a fork.
- Top each potato with shrimp, cheese, green onions, salt, and pepper.
- Place back in the oven until the cheese is melted.
- Serve hot and enjoy!
