- 2 tbsp olive oil (or avocado oil)
- 4 boneless, skinless chicken breasts (about 1 lb)
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 cup long-grain white rice (or jasmine rice)
- 2 1/4 cups chicken broth (low-sodium)
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream (optional, for extra creaminess)
- 1 tbsp fresh parsley or basil, chopped (for garnish)
- 1/4 tsp red pepper flakes (optional, for a little heat)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
- Add chicken breasts to the skillet and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant.
- Add rice to the skillet and stir to coat in the butter and garlic. Pour in chicken broth, and bring to a simmer. Cover and cook for 15-18 minutes, or until the rice is tender and liquid is absorbed.
- Stir in grated Parmesan cheese and heavy cream (if using) until the rice is creamy.
- Slice the cooked chicken and place it on top of the rice. Garnish with chopped parsley or basil and a sprinkle of red pepper flakes for added heat if desired.
- Serve immediately and enjoy!
Notes
- You can use jasmine or basmati rice instead of long-grain white rice for a different texture and flavor.
- For an extra creamy texture, don’t skip the heavy cream.
